Constellation Coffee: A Thoughtful Decaf

Constellation Coffee
Decaf doesn’t have to mean dull.
At Ottawa Valley Roast House, we believe decaffeinated coffee should still deliver flavour, balance, and comfort — without sacrificing the ritual that makes coffee special. That’s exactly why Constellation Coffee exists. It’s proof that decaf can be just as intentional and satisfying as any other roast.
A Decaf Rooted in the Highlands of Peru
Constellation Coffee begins in the high-elevation growing regions of Peru, where coffee thrives between 1500–1800 metres above sea level. At these elevations, the slower growth of the coffee cherry allows more sugars and flavour complexity to develop within the bean.
As a result, Peruvian coffees are known for their balance and approachability — qualities that make them an excellent foundation for a decaf that still feels complete in the cup. In other words, this coffee was chosen with intention from the very beginning.
Swiss Water Process: Decaf Done Right
This coffee is decaffeinated using the Swiss Water Process (SWP), a chemical-free method that removes caffeine while preserving flavour. Unlike traditional chemical methods, the Swiss Water Process relies solely on water, temperature, and time.
Specifically, the process works by:
- Using only water, temperature, and time
- Removing caffeine while keeping flavour compounds intact
- Maintaining the coffee’s natural character
Because of this, the result is a decaf that tastes like coffee first — smooth, balanced, and enjoyable — not like something that’s missing.
Varietals That Build Balance
Constellation Coffee features a blend of Typica, Bourbon, Caturra, and Catimor varietals. Each varietal plays a distinct role in shaping the final cup:
- Typica brings clarity and sweetness
- Bourbon adds roundness and body
- Caturra contributes balance and structure
- Catimor supports consistency and resilience
Together, these varietals create a decaf that feels well-rounded and dependable. Rather than relying on one dominant note, the blend focuses on harmony.
What to Expect in the Cup
Constellation Coffee is designed to be smooth, approachable, and comforting. In the cup, you’ll notice:
- A clean, balanced profile
- Gentle sweetness
- Soft acidity
- A mellow, satisfying finish
Whether you’re winding down in the evening or simply choosing a gentler option, this coffee feels right at any time of day.
Roasted for Comfort and Consistency
At Ottawa Valley Roast House, we roast Constellation Coffee with the same care as our caffeinated offerings. Just as importantly, our goal is to preserve balance and sweetness, ensuring the coffee remains versatile across different brew methods.
As a result, Constellation Coffee performs beautifully in:
- Drip coffee makers

- Cozy evening cups at home
A Decaf That Fits Into Everyday Life
Constellation Coffee was created for moments when you still want the ritual of coffee — without the caffeine. For example, it’s ideal for late nights, slow evenings, or anyone who loves coffee but prefers a lighter lift.
Ultimately, it’s proof that decaf doesn’t need to be an afterthought.
